Hearty Meal for Active Campers

I don’t know about you, but when I go on a camping trip I like to stay active. Whether I’m fishing for trout in a crystal-clear mountain stream or taking a kayak out on an all-day excursion, I require plenty of energy. At the end of the day, I’m hungry enough to eat a bear or practically any other creature living in the nearby wilderness. Instead of giving into these primal urges, I take the civilized route and prepare a hearty meal of beef stew. The following recipe should make enough to feed an entire crew of hungry campers.

Ingredients:
4 pounds cubed beef
2 cans tomatoes
4 Tsp. olive oil
2 cloves garlic, diced
4 cups hot water
4 red onions
pepper, to taste
salt, to taste
6 Tsp. granulated sugar
A dozen carrots, cut into small pieces
10 potatoes, cut into quarters
cloves
2 cans peas

Directions:
1. Over an Optimus stove, use a skillet to brown the beef in oil. Then transfer it to a Dutch oven and add the garlic. Dump water, tomatoes, onions, lemon, sugar, salt and pepper into the mix and allow to simmer for 2 hours.
2. Combine carrots, potatoes and cloves into the mixture and place a cover over the top. Add peas once the other vegetables are tender. If the end result is too runny, you can use flour to thicken it.

As a kid growing up near Lake Michigan, I went for camping excursions at least once every summer. We would pile into the family sedan – I’m still convinced that car came without suspension – and bounced down the highway to a beachside campground. My father prepared a number of delicious dishes that seem deceptively simple now that I think back on them. The pork and beans stands out as my all-time favorite.

Even though I’ve had a family of my own for some time now, it’s only recently occurred to me that camping makes for a great bonding opportunity. I’ve been continuing the tradition ever since that realization struck. My wife loved the idea, but she raised a single camping caveat: We have to provide healthy, nutritious food for the kids during our time out in the woods. A portable two burner propane stove allowed me to meet that goal with ease. I’ve boned up on my cooking skills, and the rest of the family is cherishing our time together.

Camping Grill

Family camping trips are a great way to get parents and children together in the great outdoors. Camping takes preparation however, and it’s important to prepare a checklist before you set out on your next camping adventure. Checking the following items off your list will make for a smoother, more enjoyable trip.

1.         Make sure to bring enough sleeping bags and mattresses.

2.         Before packing up you camping tents make sure they don’t need repairs and that you have all the parts.

3.         You should plan on including these cooking items in your packing; pan, a camping grill, large pot, silverware, plates, and drinking glasses.

4.         Never forget your map, compass, or you GPS.

5.         Bring a first aid kit, including bandages, anti-bacterial ointment, medical tape, and medicines.
